Habitat

An oyster tastes of where it’s from and how it was raised. To farm Little Busters, we balance nature and nurture: the edge of the eel grass, the ebb and flow of Broad Sound, the rock ledge shoreline, and tumbling atop the clean, cold swells rolling past Flying Point where the rivers meet the sea. They rest in the winter, and graze on the phytoplankton in the summer. Our Eastern oysters grow slow in these waters, giving them a deep, robust shell and just the right balance of sweet, salt and brine. And each one is hand selected to go to market. Little Busters reflect the care and intention we put into what we do and how we do it.
